Bring your Thanksgiving table to life with this vibrant fusion of colours and earthy flavours. The addition of pomegranate makes this dish really feel like a festive treat.

 

Ingredients:

  • Assorted root vegetables (such as sweet potatoes, parsnips, carrots, and beetroots), peeled and chopped
  • Olive oil
  • Salt and pepper
  • Fresh thyme
  • Pomegranate molasses
  • Pomegranate seeds

 

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss root vegetables with olive oil, salt, pepper, and thyme.
  3. Spread on a baking sheet and roast for 30-40 minutes, or until tender.
  4. While the vegetables are roasting, whisk together pomegranate molasses and a splash of water to create a glaze.
  5. Drizzle the glaze over the roasted vegetables and sprinkle with pomegranate seeds.

A rich, velvety sauce, this recipe is a comforting hug in a bowl. The secret ingredient? A creamy, dreamy sauce made from plant-based milk and a touch of magic in the form of nutritional yeast. 

Ingredients:

  • Mixed mushrooms, sliced
  • Olive oil
  • Onion, chopped
  • Garlic, minced
  • Vegetable broth
  • Soy milk or cashew milk
  • Cornstarch
  • Nutritional yeast
  • Salt and pepper

 

Instructions:

  1. Sauté mushrooms, onion, and garlic in olive oil until softened.
  2. Add vegetable broth and bring to a boil.
  3. Reduce heat and simmer until the liquid has reduced by half.
  4. In a separate bowl, whisk together soy milk or cashew milk and cornstarch.
  5. Gradually add the milk mixture to the mushroom mixture, whisking constantly.
  6. Bring to a simmer and cook until thickened.
  7. Stir in nutritional yeast, salt, and pepper to taste.

  

Decadent Vegan Pumpkin Pie

  • Shortcrust pastry (store-bought or homemade)
  • Pumpkin puree
  • Maple syrup
  • Coconut milk
  • Vanilla extract

  • Salt

 

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Roll out pie crust and place in a pie dish.
  3. In a large bowl, whisk together pumpkin puree, maple syrup, coconut milk, vanilla extract, cinnamon, ginger, cloves, and salt.
  4. Pour the filling into the pie crust.
  5. Bake for 45-50 minutes, or until the filling is set.
